SIMPLY DELICIOUS SUNDAY RECIPES



This is my mom's recipe. I took it right out of her recipe book. My mom wasn't much for separating liquids and dry ingredients. But it didn't seem to affect the taste, it was still good!!!

APPLESAUCE CAKE

2 C. Sugar
1 ½ C. Oil
2 Eggs
2 teas. Vanilla
½ teas. Salt
1 teas. Soda
2 teas. Cinnamon
3 C. Flour
2 C. Walnuts (chopped)
3 C. Apples (sliced)

In a large mixing bowl, combine all ingredients. Mixing well. Pour batter into a greased and floured 9 X 11 cake pan. Bake at 350 45 minutes.

PEANUT BUTTER FUDGE



I can't make fudge!! Yes, it's true! You usually have to eat it with a spoon when I make fudge! LOL So I don't make fudge, but, yea there is always a but! My sister-in-law assures me this is an easy recipe and it will get hard. I haven't tried it myself, but my sister-in-law makes this for us every Christmas. It is delicious!!






PEANUT BUTTER FUDGE

1 Can of pet Milk
5 C. Sugar
2 sticks of Butter

Boil 8 minutes. Remove from heat. Add the following:

13oz. jar of Marshmallow Cream
12 oz. Butterscotch Chips
1 small jar of Peanut Butter

Stir together and whip. Pour into a buttered pan. Place in fridge until cool. Cut into squares.

SIMPLY DELICIOUS SUNDAY RECIPES

Mine is for Apple Pie. Who doesn't like Apple Pie!! My hubby likes his apple pie warm and I like mine cold. So he usually gets the first piece!

APPLE PIE



2/3 C. Sugar
3 Tablespoon Flour
¼ teaspoon Ground Allspice
1/8 teaspoon Nutmeg
½ teaspoon Cinnamon
3 lbs. of ¼ - ½ inch thick slices of peeled and cored apples
1 teaspoon Vanilla Extract

Combine sugar, flour and spices in large bowl. Use your hands and mix in the apples so they are well coated, then add vanilla extract.

PIE CRUST

1 ½ C. Flour
½ teaspoon Salt
½ C. Shortening
4-5 tablespoons Water

Sift flour and salt. Cut in shortening. Add water till all is moist and forms a ball. Rollout pie dough on well floured surface.

EGG WASH

1 LARGE Egg Yolk
1 tablespoon Cream

Stir yolk and cream in small bowl to blend. Brush over top of pie.

COFFEE CAKE



This is a recipe I got out of one of my mom's old recipe books. You know how way back when you got a little recipe booklet when you bought your small appliance? That's where this recipe came from. It was in my mom's recipe book stuff. When she died I got here recipe book. A few years ago, I took the whole book apart and put it into a scrapbook. There are photos of family get together's, food, recipes and lots of other stuff I didn't want to deteriorate.
But I'm getting off the subject here, as usual, this recipe was in one of those little booklets. I have never tried the recipe myself. But it does sound really good and looks good too!





APPLE STREUSEL COFFE CAKE


2 C. Flour
1 C. Sugar
1 C. Sour Cream (optional)
½ C. Butter
2 Eggs
1 teas. Baking Powder
1 teas. Baking Soda
½ teas. Salt
1 teas. Vanilla
1 C. Apples (peeled and chopped)

Streusel Glaze

1 C. Brown Sugar
1 teas. Cinnamon
2 teas. Butter
½ C. Walnuts
1 C. Powdered Sugar
½ teas. Vanilla
3 – 3 ½ teas. Milk

In a large mixing bowl, combine flour, sugar, sour cream, butter, eggs, baking powder, baking soda, salt and vanilla. Beat at low speed until moistened. Spread ½ of batter into a greased and floured 10 inch bundt pan. Layer with 1/3 cup of batter, apples, batter. Bake in center of oven at 350 for 40 to 50 minutes. Cool upright in pan for 15 minutes. Invert on serving plate. Cool completely. Drizzle Glaze over cake.

WACKY CAKE

Thought I would post a recipe, it's been awhile since I have done one. This is Wacky Cake, I got this recipe from my Great Aunt Evelyn. I love making this cake, it is so moist! I also like watching the bubbles it makes. Yes, you read right, bubbles. You see when you mix the vinegar and baking soda you get bubbles. You could do this as a science project with your kids. Wouldn't that make a great science project for school!!!!

WACKY CAKE

3 C. Flour
2 C. Sugar
2 teas. Baking Soda
1 teas. Salt
6 T. Cocoa
2 C. Water
2 teas. Vanilla
2/3 C. Oil
2 teas. Vinegar

In a large mixing bowl, mix dry ingredients. Add wet ingredients and mix all well. Pour into a well greased and floured 9 X 11 cake pan. Bake at 350 for 35 to 45 minutes. Or until toothpick inserted comes out clean.

MEAT LOAF



MEATLOAF



My son makes a really great meatloaf. So thought I would share it with you.

1 lb. Hamburger
1 lb. of Bulk Sausage
2 Tablespoon Mustard
3/4 C. Ketchup
1 Egg
1/2 teaspoon Worcestershire Sauce
1/2 teaspoon Soy Sauce
8 to 12 Crackers
1 can Hunts Stewed Tomatoes
5 sticks of Celery - diced
1 whole Onion - dices
1 Tablespoon Butter
1/2 teaspoon Parsley
1/2 teaspoon Italian Seasoning
1/2 teaspoon Basil
3 cloves of Garlic - diced

Combine all ingredients except Ketchup, mix well. Shape into an oval shape. Place into small roaster pan. Add enough water to cover the bottom of the roaster pan. Add Ketchup to top of loaf and spread around evenly. Cover and bake at 350 for 1 to 2 hours. Depending on how big your loaf is! About 35 minutes before it's done add potatoes and carrots around the loaf. Adding more water as needed!

Most everything in this can be substituted to your own taste.

PINEAPPLE CAKE




PINEAPPLE CAKE

2 C. Flour
2 C. Sugar
2 Eggs
20 oz. can Crushed Pineapple
2 teaspoon Baking Soda


Mix all ingredients well. DO NOT DRAIN JUICE FROM PINEAPPLE. Pour mixture into a well greased and floured 8 X 11 cake pan. Bake at 350 F. until done.

CREAM CHEESE FROSTING

1 8 oz. pkg. Cream Cheese
½ Stick of Butter
1 ½ teaspoon Vanilla
1 box of Powdered Sugar

Let cream cheese and butter cool and soften at room temperature. Mix all ingredients well and beat until creamy.

PEACH PIE

1 C. Sugar
4 Tablespoon Flour
½ teaspoon Cinnamon
5 ½ C. Sliced Fresh Peaches
1 ½ Teaspoon Lemon Juice
2 Tablespoon Melted Butter

Heat oven to 425 degrees.

Skin and slice peaches, mix gently with lemon juice. Mix sugar, flour and spices to peaches carefully. Turn into pastry lined pie pan and pour butter over top. Cover with top crust. Seal edges and pinch. Place a 3 inch strip of aluminum foil around edge. Bake about 25 minutes and remove foil. Continue baking about 15 minutes, or until crust is golden brown. Cool until warm.

CARROT CAKE





CARROT CAKE

2 C. Sugar
2 C. Flour
1 ½ teaspoon Baking Soda
2 teaspoon Baking Powder
1 teaspoon Salt
1 teaspoon Cinnamon
1 ½ C. Oil
2 Eggs
1 C. Chopped Walnuts
3 C. Grated Carrots

Beat oil and sugar first. Add eggs and beat well. Add dry ingredients. (This well is a very stiff batter.) Add carrots and beat well. Add nuts and beat well. Pour batter into a well greased and floured cake pan. Bake at 350 degrees for 35 minutes or until toothpick inserted comes out clean.

CREAM CHEESE FROSTING

1 8oz. pkg. Cream Cheese
½ stick of Butter
1 ½ teaspoons Vanilla
1 box Powdered Sugar

Let cream cheese and butter cool and soften at room tempature. Mix all ingredients well. Beat until creamy.

HOMEMAKER MONDAY'S

This is my first try at this meme. I save jars, all kinds of jars. Especially big jars, I use them for all kinds of things. I have been saving Jif Peanut Butter and Kraft Miracle Whip jars. They are plastic now, so you don't have to worry about them breaking. I wash them and get the labels off of them. Then I put my own labels on them.





I use them to put my Scrapbook stuff in. Pieces of ribbon, Rick Rack, chipboard, pens and markers and just about anything else you can think of. Don't they look nice sitting on my shelf. And no they don't usually block the clock. I moved them so you could see them better.

CHICKEN AND RICE BAKE




I found this recipe on a can of Campbell's Cream of Mushroom Soup. It's really good, quick to fix and my family loves it. I usually cut the pepper down some, as I don't like that much pepper. You can also add a few slices of cheese to the top. Add the cheese just before baking time is over. Just long enough to melt the cheese.




Chicken and Rice Bake

1 Can of Cream of Mushroom Soup
1 C. of water
3/4 C. Uncooked White Rice
1/4 tsp. Paprika
1/4 tsp. Pepper
4 Skinless Chicken Breast Halves

In 2 Quart shallow baking dish, mix soup, water, rice, paprika and pepper. Mix these ingredients well. Place chicken breast on top of mixture. Sprinkle with paprika and pepper. Cover and bake at 375 for 45 minutes or until done.

CORN BREAD



This is a tried and true recipe that I use for cornbread. I have tried making cornbread in a cake pan, bread pan and any other pan, but it doesn't taste the same. So I always bake my cornbread in a cast iron skillet. And yes I have a favorite, although I have quite a collection of Cast Iron pans, and they all get used.



Cornbread

1 ½ C. yellow cornmeal
½ C. Flour
3 ½ teas. Baking powder
1 teas. Salt
3 Tbls. Sugar
1 egg
1 C. milk
¼ C. Shortening

Sift dry ingredients together into a mixing bowl. Add egg, milk and shortening. Mixing well with dry ingredients. Pour into greased Iron Skillet. Bake at 425 degree oven for 20 to 25 minutes.

DUMP CAKE




DUMP CAKE

1 (20 oz.) can Crushed Pineapple
1 (21 oz.) can Cherry Pie Filling
1 Boxed Yellow Cake Mix
1 Stick of Margarine

In a 9” X 13” pan, dump pineapple with juice and spread out evenly. Dump cherry pie filling and spread out over top. The sprinkle cake mix over top. Slice margarine into thin slices and place on top. Bake at 350 25 to 30 minutes. Top of cake should be golden brown.

SALAD DRESSING CAKE


This is a recipe I got from my Great Aunt. It is very moist, you could even leave off the icing.


SALAD DRESSING CAKE

1 C. Sugar
1 C. Kraft Miracle Whip Salad Dressing
3 T. Coco
1 C. Luke Warm Water
1 teas. Baking Soda
2 C. Flour
1 teas. Vanilla

Mix above ingredients well. Place in well greased and floured cake pan. Bake at 350 degrees for 30 – 35 minutes.

Note: This can also be put in a well greased and floured Bundt Pan.

MONKEY BREAD



This is a recipe for Monkey Bread. A gal I worked with at school gave me the recipe. She has since moved on to another job, but when I make this I think of her. Her name is Pam.

Monkey Bread

1 stick of margarine
¾ C. Brown Sugar
¼ C. Maple Syrup
¾ C. Pecans (chopped)
2 cans of biscuits (10 ct.)

Melt butter – add brown sugar, syrup and pecans. Cook until well blended. Butter (or spray) a bunt pan. Pour ¼ C. of mixture in bottom of pan. Place biscuits in bottom of pan. Place biscuits over lapping (standing up) around ring. Pour remainder of syrup mixture over top of biscuits. Bake at 350 for 20 to 25 minutes or until light brown. Flip onto serving dish.

TOMATO SOUP CHOCOLATE CAKE

I found this great recipe for Tomato Soup Chocolate Cake. The title intrigued me, TOMATO SOUP in cake!!! So I made it today for my family get together. It was really good!!! And no, you can't taste the tomato soup! The cake is really moist and OH so good.
I got the recipe from a book I read a few weeks ago. It is "Deep Dish" by Mary Kay Andrews. By the way it's a great book!! Anyway this recipe was in the book story line. They put the recipe in the back of the book so thought I would try it. The kids eating the cake are my Great Nephew David and Great Niece Kighley.










TOMATO SOUP CHOCOLATE CAKE

1/2 C. Butter
1 1/2 C. Sugar
2 Eggs
2 C. Flour
1/2 C. Cocoa
1 T. Baking Powder
1 teas. Baking Soda
1/4 C. Warm Water
1 Can (10 3/4 oz.) Tomato Soup

Preheat oven to 350 degrees.
Grease and flour a 9 X 13 inch baking pan.
In a large mixing bowl cream together butter and sugar. Add eggs, beating until fluffy.
In a small bowl mix together dry ingredients. In a small bowl mix tomato soup and water together.
Add dry and wet ingredients alternately to the butter/sugar bowl. Bake 30 minutes and let
cool before frosting.

SWEET MUFFINS



This is a recipe I got from my sister Patty. It isn't what most of us think of a muffin. Most muffins, my thought anyway, is like a cake. But this one is more like a biscuit. But you can add fruit to it. It's really great with Blueberries!!! Enjoy! To see the recipe card closer, just click on the picture!

Muffins
Patty’s Recipe

¼ C. Sugar
2 C. Flour
1 teas. Baking Powder
1 teas. Salt
1 egg
1 C. Milk
¼ C. Shortening

Stir all ingredients well. NOTE: Do not over mix, there will be some lumps. Bake at 400 for 20 to 25 minutes.

OPTIONAL: 1 C. fresh blueberries (haven't tried frozen, so don't know if it would work).

ZUCCHINI BREAD



This is another of my mom's recipes. Zucchini Bread, it's really a great recipe. It is also a really thick batter! But, boy is it great when's it's done!!! I have been scrapbooking some of my recipes, so thought I would show one here today.

Zucchini Bread
Mom’s Recipe

3 C. Flour
1 teas. Salt
1 teas. Baking powder
1 teas. Baking soda
1 Tbls. Cinnamon
3 eggs
1 ¾ C. Sugar
1 C. Oil
2 C. Shredded Zucchini
1 Tbls. Lemon Rind (grated)
2 teas. Vanilla
½ C. walnuts (chopped)

Mix all ingredients well. NOTE: Batter is very thick. Pour into well greased and floured loaf pans. Bake at 350 for 50 minutes. Cool in pans 10 minutes. Remove from pans and cool thoroughly before cutting.

PUMPKIN BREAD


Ok, lets start this off with # 1, Pumpkin Bread. This is my mom's recipe. She always made her pumpkin bread in 2 lb. coffee cans. I don' t know why, but there you have it. I make mine in bread pans. It tastes the same to me, but it doesn't seem to be a moist as her's, so maybe the coffee cans are the trick. I don't know, anyway here is the recipe:

Pumpkin Bread
Mom’s Recipe

3 ½ C. flour
3 C. sugar
2 teas. Baking soda
½ teas. Salt
1 teas. Cinnamon
1 teas. Nutmeg
2 C. pumpkin
4 eggs
1 C. oil
2/3 C. water
1 C. walnuts
1 C. raisins

Mix dry ingredients. Mix wet ingredients. Add dry mixture to wet mixture. Mix well. Pour into well greased and floured loaf pans. Bake at 350 for 1 hour or until done.
