SALAD DRESSING CAKE


This is a recipe I got from my Great Aunt. It is very moist, you could even leave off the icing.


SALAD DRESSING CAKE

1 C. Sugar
1 C. Kraft Miracle Whip Salad Dressing
3 T. Coco
1 C. Luke Warm Water
1 teas. Baking Soda
2 C. Flour
1 teas. Vanilla

Mix above ingredients well. Place in well greased and floured cake pan. Bake at 350 degrees for 30 – 35 minutes.

Note: This can also be put in a well greased and floured Bundt Pan.

MONKEY BREAD



This is a recipe for Monkey Bread. A gal I worked with at school gave me the recipe. She has since moved on to another job, but when I make this I think of her. Her name is Pam.

Monkey Bread

1 stick of margarine
¾ C. Brown Sugar
¼ C. Maple Syrup
¾ C. Pecans (chopped)
2 cans of biscuits (10 ct.)

Melt butter – add brown sugar, syrup and pecans. Cook until well blended. Butter (or spray) a bunt pan. Pour ¼ C. of mixture in bottom of pan. Place biscuits in bottom of pan. Place biscuits over lapping (standing up) around ring. Pour remainder of syrup mixture over top of biscuits. Bake at 350 for 20 to 25 minutes or until light brown. Flip onto serving dish.

TOMATO SOUP CHOCOLATE CAKE

I found this great recipe for Tomato Soup Chocolate Cake. The title intrigued me, TOMATO SOUP in cake!!! So I made it today for my family get together. It was really good!!! And no, you can't taste the tomato soup! The cake is really moist and OH so good.
I got the recipe from a book I read a few weeks ago. It is "Deep Dish" by Mary Kay Andrews. By the way it's a great book!! Anyway this recipe was in the book story line. They put the recipe in the back of the book so thought I would try it. The kids eating the cake are my Great Nephew David and Great Niece Kighley.










TOMATO SOUP CHOCOLATE CAKE

1/2 C. Butter
1 1/2 C. Sugar
2 Eggs
2 C. Flour
1/2 C. Cocoa
1 T. Baking Powder
1 teas. Baking Soda
1/4 C. Warm Water
1 Can (10 3/4 oz.) Tomato Soup

Preheat oven to 350 degrees.
Grease and flour a 9 X 13 inch baking pan.
In a large mixing bowl cream together butter and sugar. Add eggs, beating until fluffy.
In a small bowl mix together dry ingredients. In a small bowl mix tomato soup and water together.
Add dry and wet ingredients alternately to the butter/sugar bowl. Bake 30 minutes and let
cool before frosting.

SWEET MUFFINS



This is a recipe I got from my sister Patty. It isn't what most of us think of a muffin. Most muffins, my thought anyway, is like a cake. But this one is more like a biscuit. But you can add fruit to it. It's really great with Blueberries!!! Enjoy! To see the recipe card closer, just click on the picture!

Muffins
Patty’s Recipe

¼ C. Sugar
2 C. Flour
1 teas. Baking Powder
1 teas. Salt
1 egg
1 C. Milk
¼ C. Shortening

Stir all ingredients well. NOTE: Do not over mix, there will be some lumps. Bake at 400 for 20 to 25 minutes.

OPTIONAL: 1 C. fresh blueberries (haven't tried frozen, so don't know if it would work).

ZUCCHINI BREAD



This is another of my mom's recipes. Zucchini Bread, it's really a great recipe. It is also a really thick batter! But, boy is it great when's it's done!!! I have been scrapbooking some of my recipes, so thought I would show one here today.

Zucchini Bread
Mom’s Recipe

3 C. Flour
1 teas. Salt
1 teas. Baking powder
1 teas. Baking soda
1 Tbls. Cinnamon
3 eggs
1 ¾ C. Sugar
1 C. Oil
2 C. Shredded Zucchini
1 Tbls. Lemon Rind (grated)
2 teas. Vanilla
½ C. walnuts (chopped)

Mix all ingredients well. NOTE: Batter is very thick. Pour into well greased and floured loaf pans. Bake at 350 for 50 minutes. Cool in pans 10 minutes. Remove from pans and cool thoroughly before cutting.

PUMPKIN BREAD


Ok, lets start this off with # 1, Pumpkin Bread. This is my mom's recipe. She always made her pumpkin bread in 2 lb. coffee cans. I don' t know why, but there you have it. I make mine in bread pans. It tastes the same to me, but it doesn't seem to be a moist as her's, so maybe the coffee cans are the trick. I don't know, anyway here is the recipe:

Pumpkin Bread
Mom’s Recipe

3 ½ C. flour
3 C. sugar
2 teas. Baking soda
½ teas. Salt
1 teas. Cinnamon
1 teas. Nutmeg
2 C. pumpkin
4 eggs
1 C. oil
2/3 C. water
1 C. walnuts
1 C. raisins

Mix dry ingredients. Mix wet ingredients. Add dry mixture to wet mixture. Mix well. Pour into well greased and floured loaf pans. Bake at 350 for 1 hour or until done.
