VINTAGE RECIPE THURSDAY

My sister gave me this recipe years ago. I've used it countless times. Although it doesn't really taste like a muffin to me, it kind of reminds me of a biscuit, only fluffyer. And since I can't make biscuits, this is the next best thing. You know, the old fashioned kind mom used to make. Anyway here's the recipe. Sorry don't have any pictures. But they are yummy with some butter and jelly!

Muffins

1/4 C. Sugar
2 C. Flour
1 Teaspoon Baking Powder
1 Teaspoon Salt
1 Egg
1 C. Milk
1/4 C. Shortening

In a medium size bowl mix until blended. NOTE: do not over mix, there will be lumps. Pour into well greased muffin tin. Bake at 400 degrees for 20 - 25 minutes. Serve hot. Makes about 12.
